Breakfast, lunch or dinner; be it for any meal, eggs always come to the rescue. Of the hundreds of egg recipes, one is Indian style Egg curry, a healthy satisfying dish that goes great with rice and bread/roti.
Ready to cook? Let’s get started!
- 3 eggs
- 2 medium size tomatoes
- 3 medium size onions
- 4 whole green chilies split into two
- 1/2 teaspoon ginger garlic paste
- salt to taste
- 1/2 teaspoon red chili powder (or to taste)
Heat some oil in pan and fry eggs till they go golden brown and put them aside. Be careful while doing this as the boiled eggs splutter.
In the same pan, add more oil and fry chilies for 10 seconds (These splutter too!) Then, add and sauté onions with ginger garlic paste till it goes brown.
Add tomatoes, turmeric, red chili powder and cook till the oil separates.
Add a glass of water. Bring the curry to a boil, then add salt to taste and let it simmer till the oil comes up.
Add Chopped coriander leaves, fried eggs to the pan and cook for a couple of minutes.
Lip-smacking Egg Curry is ready! Serve it with rice and enjoy your meal!
