Chicken Fried Jasmine Rice

Fried rice is a dish that is meant to repurpose leftover rice from a day or two before. So if you don't have any on hand, cook the rice as directed and spread it thinly and evenly on a large pan for about 3 hours to allow it to dry out completely.

Ingredients

  • 8.8 oz 250 g of Jasmine Rice
  • 1 large chicken breast
  • 2 large eggs
  • 2 oz 60 g of peeled carrot
  • 2.8 oz 80 g of Chinese onion
  • 3.2 oz 90 g of snow peas
  • 3 cloves of garlic
  • 4 tablespoons of fish sauce
  • 2 teaspoons of sugar
  • Fresh coriander
  • Olive oil

Instructions

  • Cook the rice in plenty of water, for 11 minutes, with a pinch of salt. When finished, strain, cool and drain well.
  • Cut the breast into small dice. In a hot, wide nonstick skillet, with 4 tablespoons of olive oil, brown the meat over medium-high heat, sautéing frequently.
  • When the chicken is golden brown, add the chopped peeled garlic. When they start to brown, remove them from the pan.
  • Add the eggs to the pan and scramble, add a couple of tablespoons of olive oil as needed. Remove from the pan.
