Red Beans & Rice with Andouille Sausage

Ingredients

  • 2 cups Minute Rice
  • 1 tablespoon butter
  • 1/2 green bell pepper chopped
  • 1/2 onion chopped
  • 1 15- ounce can red beans rinsed and drained
  • 14- ounces beef broth
  • 1 tablespoon Louisiana Cajun Seasoning
  • Hot Pepper Sauce optional
  • 1 14- ounce package of Zatarain's Andouille Smoked Sausage already cooked - cut each link in half and then slice thin

Instructions

  • Melt butter in a large skillet over medium heat. Add the bell peppers and onions, cook and stir until tender.
  • Add the beans to the bell peppers and onion mixture, add broth, sausage, and cajun seasoning. Stir to mix well. Bring to a boil over medium heat.
  • Stir in rice and cover. Remove from the heat and let stand for 5 minutes. Fluff with a fork. Serve with pepper sauce, if using.

Notes

You can use dry red beans for this recipe, just prepare as instructed on the package before adding to the mixture. You can also substitute kidney beans, black beans, or white beans if you choose.
Serve this dish as a side to accompany some home-cooked or barbecued pulled pork, iced tea. and a bit of cornbread for a southern meal to enjoy all together.
