Fresh Orzo Salad

Ingredients

  • 1 1/2 cup orzo pasta
  • 4 cups water
  • 1 cup halved cherry tomatoes
  • 1 diced onion
  • 1 diced cucumber
  • 1 cup feta cheese
  • 1/4 cup white wine vinegar
  • 3/4 cup olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried basil
  • 1/2 tsp crushed red pepper
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp lemon juice

Instructions

  • In a saucepan of boiling water add orzo and cook for 10 minutes. Let it cool down.
  • In a bowl, place cherry tomatoes, onion, cucumber, and cooled orzo. Stir very well.
  • In another bowl, make the dressing by combining olive oil, white wine vinegar, garlic powder, oregano, basil, onion powder, crushed red pepper, salt, pepper, and lemon juice.
  • Dress the salad to taste and mix very well.
  • Add feta cheese prior to serving
